Nick Wallace is one of the founders of Wallace Farms, a 100% grass-fed cattle farm located in Keystone, Iowa.  When away at college in 1997, Nick was diagnosed with Lymphoma.  He returned to Iowa for treatment, and to finish school.  After spending some time in culinary school, he returned “Back to the Land” that his great-great grandfather first farmed in 1894, founding Wallace Farms in 2003.

Nick now has buying clubs all over Iowa and northern Illinois.  Wallace Farms has been our partner since the inception of Natural Evolution- not only providing ourselves and our clients with excellent grass-fed, free-range, and pastured meats- but also hosting numerous classes and workshops at their commercial warehouse in Naperville, IL.  Nick has recently launched www.Nicks-Sticks.com, selling healthy snacks – shipped to your door!!
